We thought you might enjoy learning some things about what makes Tillamook cheese unique. To fully appreciate our cheese it will help to understand how we approach manufacturing, packaging and shipping.

 

Quality
Since our beginnings nearly a century ago, we’ve learned a lot about what makes a superior dairy product. We believe it starts and ends with one word: quality. It’s what brought our founding farmers together in 1909 and it’s what continues to motivate us today.

 

Our experience has taught us that only the freshest milk yields premium-quality cheese products. All our milk is tested for antibiotics and bacterial levels. Milk that passes our demanding tests joins the cheesemaking process as soon as it is received. 
 

Consistency
We view cheese making as an art form, and for us the art starts with the century-old recipe handed down to us by our founding farmers. This includes the modifications made to the standard cheddaring process, which give Tillamook cheese its characteristic flavor and texture recognized and enjoyed by cheese connoisseurs worldwide.

Taste
Storing the aging cheese at an optimum temperature is essential for ideal ripening or aging. Through the aging process, our cheese develops the cheddar flavor characteristic of Tillamook cheddar cheese.

 

The length of time cheddar is held for aging determines whether it will be sold as medium (aged a minimum of 60 days), sharp (aged a minimum of nine months) or extra sharp (aged a minimum of 15 months). Our Vintage White cheddars are aged 100 days for medium and two years for extra sharp.
