Classic Cheddar Potato Pie
Description: This recipe is displayed on the back of our new Tillamook® Classic Cheddar Blend Shredded Cheese package.

Instructions:
Preheat oven to 375o F.

In a medium pan, cook bacon until crisp.  Transfer to paper towels to drain.  Drain all but 2 teaspoons of bacon fat from pan.  Add onions, thyme and water. Cook, stirring occasionally, for 9 minutes until golden brown.  In large bowl, combine potatoes, onion, bacon, pepper, and egg yolks. Gently stir in 3/4 cup cheese. Spread potato mixture into pie shell.  Bake for 25 minutes.  Top with remaining 1/2 cup cheese. Continue to bake for 15 minutes until top is golden.  Let rest 10 minutes before serving.

*Low Salt Mashed Potatoes
1 ½ pounds potatoes, peeled and cubed
2 ½ tbsp. Tillamook® Unsalted Butter
1/4 tsp. salt
1/3 cup cream or milk, heated

In medium saucepan, cover potatoes with cold water.  Bring to boil and cook ten minutes, until fork tender.   Drain thoroughly and return to pot. Add butter and salt. Using a potato masher or fork mash them together until well combined.  Stir in milk.

4 strips bacon, finely chopped
1 cup chopped onion
1/4 tsp. thyme
1 tbsp. water
2 1/2 cups low salt mashed potatoes*
1/4 tsp. pepper
2 egg yolks
1 ¼ cups Tillamook® Shredded Classic Cheddar Blend (Sharp Cheddar, Vintage White Medium Cheddar & Medium Cheddar Cheese), divided
1 9-inch pie shell, uncooked
