Crisp Tacos with Chorizo and Potatoes
Description:
Instructions: In a medium non-stick skillet, heat oil over medium heat. Add potatoes and cook for 1 minute. Stir in chorizo and onion and cook, stirring constantly, for 5 minutes until chorizo is cooked and onions are translucent. Remove from heat and stir in cheese. Fill each taco with about 2 tablespoons of filling. Garnish with salsa and serve immediately. Makes 8 tacos
Ingredients:
1 tbsp. vegetable oil 3/4 cup packaged frozen shredded potatoes 6 oz. chorizo sausage, casing removed 3/4 cup thinly sliced onions 3/4 cup (3 oz.) Tillamook® Mexican Shred Blend with Medium Cheddar, Monterey Jack and Queso Quesadilla Cheese 8 taco shells 3/4 cup salsa |
