Gourmet Tillamook Grilled Cheese
Description: This reinterpretation of the lunch standard adds Tapenade to the cheesy, crunchy classic. The perfect companion to a bowl of rich tomato soup.

Instructions:

Brush one side of each bread slice lightly with olive oil.  Turn over 4 slices, oil sides down, and spread 2 teaspoons Tapenade on each.  Toss cheese with basil; press half of cheese on Tapenade.

Top with red peppers, bacon, then remaining cheese mixture.  Place remaining bread slices, oil sides up, on top, making 4 sandwiches.

Grill sandwiches over medium heat in large skillet until golden brown, about 5 minutes per side.           

Makes 4 sandwiches

Ingredients:
8 (1/2-inch-thick) slices crusty country bread        
3 tablespoons extra-virgin olive oil        
8 teaspoons tapenade (olive spread)        
2 cups (8-ounces) Tillamook® Shredded Sharp Cheddar Cheese        
3 tablespoons minced fresh basil        
2 roasted red peppers, cut into strips        
8 slices bacon, cooked
