Grilled Mexican Pizza with Tillamook Pepper Jack Cheese
Description: This is a fun appetizer for a small gathering. The pizzas are at their best when eaten directly off the grill. They are cooked one at a time but only take about 5 minutes. Once your guests have finished the first pizza the second will be coming off the fire!

Instructions:

Special equipment: small-holed grill rack, wooden pizza peel or baking sheet, tongs


Prepare grill to cook over indirect heat by placing coals to one side or if using a gas grill, turn one set of burners to low. Place small-holed rack on indirect side of the grill and preheat grill to high.

On lightly floured work surface, roll one dough piece into a thin round about 6 inches in diameter. Repeat with remaining 3 dough pieces. Cover with a clean kitchen towel until ready to use.

Place one dough round on a lightly floured wooden pizza peel or the back of a baking sheet. Brush lightly with olive oil and season with salt to taste. Top with 1/4 each of sausage, green onions, pepper and tomato. Sprinkle 1/4 of cheese evenly on top.

Slide pizza off peel or pan onto the preheated rack on the indirect side of the grill. Cover and cook for 5–6 minutes. Remove cover and using tongs slide pizza to direct side of the grill. Crisp the crust for about 30 seconds to one minute, taking care not to burn the pizza. Remove from grill.

Assemble and cook the remaining pizzas one at a time, flouring the peel or baking sheet for each pizza.

Garnish hot pizza with diced avocado and chopped cilantro. Cut into 4 wedges and serve.


Makes 4 pizzas

Ingredients:

12 oz. purchased pizza dough, divided into 4 equal pieces
Flour for rolling dough
1 tablespoon olive oil
Salt
1/4 lb. chorizo sausage, casing removed, crumbled and cooked
2 green onions, thinly sliced, (bulb and 1 inch of the green tops)
1 medium Anaheim pepper, seeds and ribs removed, thinly sliced
1 medium tomato, diced
1 cup grated Tillamook® Pepper Jack Cheese

Garnish
1/2 avocado, peeled and diced
2 tablespoons chopped fresh cilantro leaves
