Mushroom Pesto Cheese Melts
Description: Start with a good-quality pesto and end up with a fantastic bruschetta-style appetizer. These will go fast!

Instructions:

Preheat oven to 375 degrees F.          
         
Toast bread slices on baking sheet until golden.         

Sauté mushrooms in olive oil in a large skillet over medium-high heat until beginning to brown, about 6 minutes.  Season with salt and pepper.

Place oven rack 6 inches from heat source; preheat broiler to high.  Spread 1 1/2 teaspoons pesto on each piece of toast.  Spoon mushrooms over pesto and top with cheese.  Broil until cheese melts and begins to brown, about 30 to 45 seconds.            

Makes 4 servings

Ingredients:
4 (3/4-inch-thick) slices Italian bread        
1/4 cup pesto        
3 cups thinly sliced shitake and crimini mushrooms        
2 tablespoons olive oil        
Salt and freshly ground pepper         
1 8-ounce package Tillamook® Shredded Medium Cheddar Cheese (2 cups)
