Roast Beef Sandwich with Tillamook Smoked Black Pepper Cheese

Instructions:

Place onions in a small bowl, add olive oil and toss to coat.  Stir in vinegar, parsley, salt and pepper. Cover and chill at least 2 hours.

In a small bowl combine mayonnaise and horseradish.

Preheat the broiler.  Place bread on a baking pan and spread with mayonnaise mixture.  Arrange equal portions of roast beef and cheese slices on each piece.  Place under broiler for about 1 minute until cheese melts.  Top with marinated red onions and serve.

Makes 4 sandwiches

Ingredients:
1 medium red onion, sliced into very thin rings
1 teaspoon olive oil
¼ cup rice vinegar
1 tablespoon chopped parsley
Pinch of salt and pepper
3 tablespoons mayonnaise
2 teaspoons prepared horseradish
4 (½ inch thick) slices rustic style bread, lightly toasted
1 pound thinly sliced roast beef
6 ounces Tillamook® Smoked Black Pepper White Cheddar Cheese, thinly sliced (20 slices)
