Shrimp Stuffed Jumbo Shells in Marinara Sauce

Instructions:

Heat oven to 375°.
In a large skillet, over low heat, sauté onion in olive oil. Cook until onions are soft and translucent, about 6 minutes. Add garlic and cook an additional 2 minutes. Stir in shrimp and continue to cook just until shrimp turns pink, about 4 minutes. Add salt and crushed red pepper. In a medium bowl, stir together shrimp, salt, crushed red pepper, ricotta, spinach and ¾ cup of cheese.

In bottom of a 7 x 11-inch baking pan, spread ½ cup of marinara sauce. Stuff shells with about 3 tablespoons shrimp mixture and arrange in baking pan. Spoon remaining sauce over shells and bake for 20 minutes. Remove pan from oven and sprinkle with remaining cheese. Bake until cheese is melted, about 5 minutes.

2 tbsp. olive oil
2/3 cup chopped onion
2 tsp. minced garlic
6 oz. raw, shelled shrimp, chopped
1 tsp. salt
½ tsp. crushed red pepper 
2/3 cup ricotta cheese
2/3 cup frozen spinach, thawed, and squeezed dry
1 ½ cups (6 oz.) Tillamook® Italian Blend Shreds with Mozzarella and Parmesan Cheese, divided
1 ½ cups marinara sauce, divided 
12 jumbo pasta shells, cooked according to package directions
