Tillamook Chilaquiles
Description: A traditional and poplar Mexican breakfast, this cheesy tortilla dish has graduated to a delicious dinner entrée. If you haven't tried it, let tonight be the night. Muy delicioso!
Instructions: Preheat the oven to 350 degrees F. Spray a 13x9x3-inch baking dish with non-stick cooking spray. Layer 1 cup of tortilla chips covering the bottom of the baking dish completely. Lightly press down on the chips to make them somewhat level. Layer the shredded chicken over the chips. Then add the onions over the chicken. Add the rest of the tortilla chips to form another layer. In a separate bowl, mix both the regular tomato sauce and the “Mexican style” hot tomato sauce. Spread mixture over the entire casserole, so food is coated with the sauce. Top off with a generous layer of monterey jack cheese. Bake at 350º F for 20 minutes or until thoroughly hot and bubbly. If you wish you may add additional topping once it is out of the oven such as olives or avocado. Makes 4 servings.

2 cups of tortilla chips 1 cup shredded cooked skinless chicken breast 1 8-ounce can of tomato sauce 1 8-ounce can of hot “Mexican-style” tomato sauce 1/3 cup chopped onion 1 cup shredded Tillamook® Monterey Jack Cheese |
