Tillamook Cheese and Chorizo Omelet Wrap
Description: Spicy Mexican sausage, eggs and salsa, all conveniently confined within a fresh tortilla, make for a tasty breakfast and a positive start to your day.

Instructions:

Toppings: Tillamook® Sour Cream, guacamole, salsa      

Whisk eggs, water, garlic, salt and pepper until blended.  For each omelet, heat about 2 teaspoons oil in 6 or 8-inch nonstick skillet over medium-high heat.  Pour scant 1/2 cup egg mixture into skillet.  Using spatula, lift edges of eggs as they cook, letting uncooked part run underneath until omelet is set.  Sprinkle about 1/2 cup each sausage and cheese evenly over omelet.         

Using spatula, lift omelet and slide onto tortilla.  Sprinkle 1/4 cup diced tomatoes and 1 tablespoon each green onion and cilantro down one side of omelet; roll up tortilla, omelet and fillings.  Serve with toppings.  Repeat with remaining ingredients to make 9 additional wraps.  Makes 10 servings.

Ingredients:
1 dozen large eggs        
2 tablespoons water        
3 cloves garlic, crushed        
2 teaspoons salt        
1/2 teaspoon ground black pepper        
Vegetable oil or melted Tillamook® Butter         
20 to 24 ounces (5 cups) chorizo or other spicy sausage, casings removed, cooked and crumbled         
20 ounces (5 cups) shredded Tillamook® Medium Cheddar Cheese     
10 8-inch flour tortillas, warmed        
2-1/2 cups tomato, diced        
2/3 cup green onion, minced        
2/3 cup fresh cilantro, minced
