Tillamook Halibut
Description:
The mild flavor of this white fish proves an excellent complement to the commingling peppers and onions, all baked up under a blanket of melted Tillamook® Sharp Cheddar Cheese. Tillamook Cheese Recipe Contest 2001. Submitted by Connie Rowland, Spokane, Wash.
Instructions: In a bowl stir the following ingredients: 1-2 jalapeños, seeded and diced; 1/4 to 1/2 cup diced onions (green or white); 1 1/2 cups sharp cheddar cheese; 1 1/2-2 cups sour cream; 1 cup real mayonnaise In a casserole dish, place a thick halibut filet. Sprinkle with salt and pepper. Spread the paste made from the above ingredients on the fish evenly. Sprinkle more grated cheese over the top of this. Bake in 350 degree F oven for 20-40 minutes. Serves 2-3.
