Tillamook Strata
Description: The aroma of this make-ahead dish is sure to get them out of bed in the morning.
Instructions: Heat oven to 325º. Arrange bread in a single layer on a baking sheet and bake for 15 minutes, turning over once. Remove from oven and set aside. In large skillet set over medium-high heat, sauté sausage, breaking up large pieces, until it begins to brown, about 5 minutes. Add onion and cook until onion is translucent. With a slotted spoon transfer meat mixture to a medium bowl and stir in spinach. Season with 1/2 teaspoon salt and pepper. Set aside to cool. To assemble: Butter a 9 x 13 inch baking pan. Arrange half of the bread in a single layer, cutting pieces to fit if necessary. Spread half of the sausage mixture evenly on top and sprinkle evenly with half of the cheese. Repeat with a second layer of bread, remaining sausage mixture and top with cheese. In a medium bowl, whisk together eggs, milk and remaining 1/2 teaspoon salt. Pour evenly over bread layers and cover with plastic wrap. Refrigerate for 8 hours or overnight. To bake: Remove strata from refrigerator and let stand at room temperature for 30 minutes. Place rack in middle of oven and preheat to 350º. Bake for about 65-75 minutes, until top is puffed and lightly browned. Cool 5 minutes and serve. 8-10 servings

12 to 16 slices of pre-sliced French bread, (1/2 inch thick) 1 pound sweet Italian sausage, casings discarded 1 1/4 cups diced onion 2 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry 1 teaspoon salt, divided pepper to taste 1 tablespoon Tillamook® Butter 3 cups (12 ounces) shredded Tillamook® Swiss Cheese 12 large eggs 3 1/2 cups whole milk |
