Tuscan Cheese Melts
Description:

Instructions:

Preheat oven to 400 degrees F.
Cut bread in half lengthwise; place halves, cut side up, on a baking sheet.
Toast bread at 400 degrees for 10 minutes. Brush cut sides of bread with vinaigrette.
Toss cheese with basil. Divide cheese into 4 portions and cover evenly over each bread half. Arrange tomatoes on cheese and season with salt and pepper. Scatter olives on top.
Bake until cheese melts, 10 minutes. Cut each bread half into 4 or 5 pieces to serve. Makes 16 to 20 pieces.

Serving Suggestions:
Cut into slices and serve with mixed fresh salad greens tossed with vinaigrette.

Ingredients:
2 whole loaves Italian bread, approximately 1 pound each
1/2 cup bottled balsamic vinaigrette dressing
1 (2 pound) package Tillamook® Fancy Shred Medium Cheddar Cheese (8 cups)
2/3 cup fresh basil, coarsely chopped
8 medium plum tomatoes, thinly sliced
Salt and freshly ground pepper to taste
1/2 cup sliced, pitted Kalamata olives
